- Both in the North and in the South, food and recipes were influenced by the English, Irish and Germans.
- Typical food items of the day included: a variety of soups and stews, fried meats and vegetables, breads and biscuits and fruit pies.
- Beverages included milk, hot coffee, hot or cold tea, water and some soft drinks, like lemonade and sarsaparilla which was similar to ginger ale.
- Many people grew their own fruits and vegetables. These included: tomatoes, lettuce, beans, sweet corn and cabbage.
- People ate most of the same types of meat that we do today. These included: beef, veal, pork, bacon, chicken, turkey and lamb.
- Hardtack was the Union soldier's main source of food because it was easy to make and transport. It was a type of cracker or biscuit made from flour.
